Ginger soda

INGREDIENTS

For 2 servings

  • 250 ml sparkling water or soda water

  • 40 g fresh ginger, peeled and sliced

  • 2 tablespoons lemon juice or lime juice

  • 1 to 2 tablespoons honey, maple syrup, or simple syrup

  • 120 ml still water

  • ice cubes, for serving

Optional premium additions

  • thin lemon slices

  • fresh mint leaves

  • a little orange zest

  • a pinch of cayenne for extra warmth


METHOD

1. Make the ginger base

Place the sliced ginger and still water in a small saucepan. Bring to a gentle simmer and cook for 8 to 10 minutes, until the water is lightly infused and fragrant.

2. Sweeten and cool

Remove from the heat and stir in the honey or preferred sweetener while still warm. Let the mixture cool slightly, then strain to remove the ginger pieces.

3. Add the citrus

Stir the lemon or lime juice into the strained ginger mixture. Taste and adjust the sweetness if needed.

4. Assemble the drink

Fill two glasses with ice. Divide the ginger-citrus base between them, then top with sparkling water.

5. Serve

Stir gently and serve immediately. Add lemon slices, mint, or a little zest if you want a more elevated finish.
