INGREDIENTS

  • 3 to 4 radishes, thinly sliced

  • a small handful of rocket, baby greens, or microgreens

  • 1 teaspoon lemon juice

  • 1 teaspoon olive oil

  • salt, to taste

  • freshly ground black pepper, to taste

Optional premium additions

  • a few alfalfa sprouts or mixed sprouts

  • chili flakes

  • crumbled feta or soft goat cheese

  • toasted seeds

  • a soft-boiled or poached egg

  • a few thin cucumber ribbons


METHOD

1. Toast the bread

Toast the sourdough or rustic bread until golden and crisp at the edges, but still slightly tender in the center. This gives the toast the perfect base and keeps it sturdy enough for the toppings.

2. Prepare the avocado
