Avocado spinach egg toast

INGREDIENTS

For 1 serving

  • 1 large slice wholegrain, sourdough, or rustic bread

  • 1 ripe avocado

  • 1 large handful fresh spinach

  • 1 egg

  • 1 teaspoon olive oil

  • 1 teaspoon lemon juice

  • salt, to taste

  • freshly ground black pepper, to taste

  • a pinch of chili flakes

Optional premium additions

  • a few drops of extra virgin olive oil for finishing

  • microgreens or sprouts

  • a pinch of smoked paprika

  • a little crumbled feta

  • sesame or pumpkin seeds


METHOD

1. Toast the bread

Toast the bread until golden and crisp on the outside, while still slightly soft in the center. This gives the toast enough structure to hold the toppings well.

2. Prepare the avocado

Mash the avocado lightly in a small bowl with the lemon juice, a pinch of salt, and a little black pepper. Keep it slightly chunky for a more natural texture.

3. Cook the spinach

Heat the olive oil in a small pan over medium heat. Add the spinach and cook for 1 to 2 minutes, just until wilted and glossy. Season lightly with salt and pepper.

4. Cook the egg

Bring a small saucepan of water to a gentle simmer. Crack the egg into a small bowl, then carefully slide it into the water. Poach for about 3 minutes, or until the white is set and the yolk stays soft. Remove gently with a slotted spoon and let it drain briefly.
If preferred, you can also use a soft-boiled egg.

5. Assemble the toast

Spread the mashed avocado generously over the toast. Top with the sautéed spinach, then place the poached egg on top.

6. Finish and serve

Season with black pepper and chili flakes. Add any optional toppings you like, then serve immediately while the toast is warm and the egg is still soft.
